Das Stadium des Prädiabetes ist durch eine Zunahme der Insulinresistenz und durch eine Abnahme der pankreatischen Betazell-Funktion gekennzeichnet. Die Vorstufe des Diabetes mellitus Typ 2 kann durch eine gestörte Glukosetoleranz und/oder durch eine Störung des Nüchternblutzuckers identifiziert werden.

Ziel der Prävention des Diabetes mellitus Typ 2 ist es, Ernährungsfaktoren zu identifizieren, welche effektiv in der Bevölkerung umgesetzt werden können. Eine fettarme Ernährungsweise mit einer Ballaststoffaufnahme von mehr als 30 g pro Tag stellt dabei ein effektives Mittel dar.

Eine ballaststoffreiche Kost wirkt sich in vielschichtiger Weise positiv auf die körperliche Gesundheit aus. Neben den bekannten positiven Wirkungen im Magen-Darm-Trakt können diese mit einer hohen Evidenz als ein effektives Mittel zur Gewichtsreduktion und zur Prävention oder Therapie von Störungen im Zucker-und Fettstoffwechsel Anwendung finden.
