Zusammenfassung

Der Veganismus ist eine Ernährungs- und Lebensweise. Langjährige Erfahrungen und wissenschaftliche Daten belegen, dass sich eine vegane Ernährung günstig auf die Gesundheit auswirkt, sofern eine vollwertige Auswahl der pflanzlichen Lebensmittel getroffen wird und bei Bedarf eine Ergänzung kritischer Nährstoffe durch Supplemente oder angereicherte Nahrung erfolgt. Der Veganismus trägt neben der Reduzierung des Risikos von ernährungsabhängigen Erkrankungen durch seine ganzheitlich ausgerichtete Orientierung zu einem nachhaltigen Umweltverhalten bei. Langfristig könnte sich die vegane Lebensweise von einer Rand­erscheinung unserer Gesellschaft zum Mainstream entwickeln.

Abstract

Veganism is a diet and a lifestyle. Longtime experience and scientific data show that a vegan diet has a favorable effect on health, provided that the proper plant food is selected and if needed that critical nutrients are added in form of supplements or as enriched foods. In addition to reducing the risk of nutrition related diseases veganism contributes to a sustainable environmental behavior due to its holistic orientation. The vegan lifestyle could develop from the fringes of society, to a mainstream trend.
