Evaluation of functional materials from Kalopanax septemlobus fresh sprout in Korea

    Kalopanax septemlobus (Thunb.) Koidz., is a deciduous tree, which is distributed only in Northeast Asia. The fresh sprout of K. septemlobus is used for food [1]. The objective of this study was to evaluate the presence of nutritional components, bioactive compounds and antioxidant activity of K. septemlobus fresh sprout from 20 clones. Fresh sprout had largest carbohydrate, crude protein in the proximate composition and had the largest content of K followed by Ca, Mg minerals. Fresh sprout contained a total of 34 kinds of amino acids and the number of essential amino acid was 7. Total polyphenol contents in fresh sprout of K. septemlobus was 256.8 mg/g and total flavonoid contents was 15.4 mg/g. DPPH free radical scavenging activity showed a percentage of oxidation inhibition higher than 80% and ABTS free radical scavenging activity showed a percentage of oxidation inhibition higher than 90% at 1000 ppm for all clones. Antioxidant activity of K. septemlobus was similar to synthetic antioxidants such as BHA (butylated hydroxyanisole). It can be concluded that the fresh sprout of K. septemlobus has high percentage of oxidation inhibition with high nutritional value; hence, it seems to be a potential source of natural antioxidants for the human health. However, further studies are necessary to characterize the structure of these functional substances.
