Zusammenfassung

Vegetarische und vegane Ernährungsformen werden zunehmend beliebter. Im zweiten Teil des Beitrags wird das präventive und therapeutische Potenzial pflanzenbasierter Kostformen dargestellt. Die vorliegenden Studien zeigen, dass Vegetarier und Veganer ein teilweise deutlich geringeres Risiko für Übergewicht und Adipositas, Typ-2-Diabetes, Hypertonie, kardiovaskuläre Erkrankungen, Krebs und weitere ernährungsassoziierte Krankheiten aufweisen. Bei einigen dieser Erkrankungen konnten durch eine Umstellung auf vegetarische oder vegane Kost auch therapeutische Effekte erzielt werden. Vegetarische und vegane Kostformen bieten ein erhebliches, bisher kaum genutztes Potenzial zur Prävention und Therapie ernährungsassoziierter Krankheiten.
