Zusammenfassung
Getreideprodukte – sowohl Vollkorn als auch helles Mehl – tragen in Deutschland zu etwa einem Drittel zur täglichen Ballaststoffaufnahme bei. Vollkornprodukte spielen dabei keine wesentliche Rolle: Nur 5 % der Backwaren und 12 % der Brote sind aus Vollkorngetreide hergestellt. Vollkorn enthält ernährungsphysiologisch die wertvollen Randschichten (Kleie) mit einem natürlichem Mix von löslichen und unlöslichen Fasern, Mineralstoffen, Enzymen sowie bioaktiven Komponenten.
Hohe auslobbare Gehalte an Ballaststoffen sind ein wichtiger Werbefaktor. Während mit Kleie angereicherte Brote vermindertes Volumen entwickeln und teils sandig schmecken, erhöhen Pentosane und Beta-Glukane die „Saftigkeit“.
Ballaststoffreiche Getreideprodukte verstärken das Sättigungsgefühl und wirken sich positiv auf den Gastrointestinaltrakt aus. Sie wirken präbiotisch, kurbeln die Peristaltik an, erhöhen das Stuhlvolumen und tragen zu einem regelmäßigen Stuhlgang bei. Die Bewertungen von Ballaststoff-Isolaten in klinischen Studien bestätigen gesundheitsrelevante Effekte unter anderem auf den Cholesterinspiegel, die Blutfettwerte, den glykämischen Index und die Insulinsensitivität. Insgesamt senken Getreideballaststoffe über diverse Mechanismen das Risiko für Typ-2-Diabetes und kardiovaskuläre Erkrankungen.
Abstract
Cereal products – wholemeal flour as well as refined flour – contribute about one third of the daily amount of dietary fibres in Germany. Whole grain products do not have a major role in this. Only 5 % of baked goods and 12 % of bread are made from wholemeal flour. In terms of nutrition physiology, whole grain cereal contains valuable outer layers (bran) with a natural mix of soluble and insoluble fibres, minerals, enzymes, and bioactive components.
To be able to claim a high content of dietary fibre is an important factor for the purposes of advertising. Bread fortified with bran develops a reduced volume and sometimes tastes of sand, whereas pentosans and beta-glucans increase the moistness of the dough.
Cereal products rich in fibres increase the sensation of satiety and have a positive effect on the gastrointestinal tract. They have a prebiotic effect, improve peristalsis, increase the faecal volume, and contribute to regular bowel movements. The evaluation of fibre isolates in clinical studies has confirmed health-relevant effects – on cholesterol concentrations, blood lipids, the glycaemic index, and insulin sensitivity, among others. Overall, dietary fibres from grain lower the risk for type 2 diabetes and cardiovascular disorders by means of diverse mechanisms.
