Zusammenfassung

Entspricht die Empfehlung „weniger Fett – mehr Kohlenhydrate“ noch dem heutigen Kenntnisstand? Der Beitrag stellt Ergebnisse großer Kohorten- und klinischer Diätstudien vor, die die Auswirkungen der Fettzufuhr neu bewerten lassen. Danach muss das Risikopotenzial von gesättigten Fettsäuren infrage gestellt werden und somit auch die Empfehlung, mehr Kohlenhydrate zu verzehren.
