Total content of phenols and anthocyanins in fruits from Bosnia

AIM: The aim of this study was to determine the total content of phenols and anthocyanins in some fruits. Methods: The content of total phenols was estimated by a spectrophotometric method using gallic acid as a standard. The content of total anthocyanins was measured using a pH differential spectrophotometric method. Ideain chloride was used as a standard for determination of anthocyanins. Results: The total content of phenols in red currant fruits was 8,4mg/g, dried cranberry 8,2mg/g, cranberry 7,5mg/g, black mulberry fruit 7,3mg/g, wild cherry 6,9mg/g, hawthorn 6,4mg/g, wild bilberry 5,8mg/g, black currant 5,2mg/g, dried prunes 5,1mg/g, drain 3,5mg/g, and prunes 3,4mg/g. The lowest quantity of total phenols was found in cultivated strawberries. It was only 2,1mg/g. The total anthocyanins content in wild bilberry was 2030µg/g, wild cherry 1540µg/g, dried cranberry 1400µg/g, black currant 822µg/g, cranberry 400µg/g, cultivated strawberries 260µg/g, black mulberry fruit 240µg/g, drain 160µg/g, red currant 147µg/g, hawthorn 80µg/g, prunes 50µg/g and in dried prunes 10µg/g. CONCLUSION: The highest content of total phenols was in red currant and the lowest in cultivated strawberries. The highest content of total anthocyanins was in wild bilberry and the lowest in dried prunes. The spectrophotometric methods for determination of total phenols and anthocyanins appear to be a valid and useful procedure for analysis of phenols and anthocyanins in supernatants of fruits.
