Vegane Ernährung – gesund oder risikobehaftet?

Zusammenfassung

Eine vegane Ernährung kann eine gute Versorgung mit den Nährstoffen, wie sie in pflanzlichen Nahrungsmitteln üblicherweise vorhanden sind, liefern. Allerdings schaffen nicht alle Veganer eine gesundheitsfördernde Umsetzung, was zur Mangelversorgung bei Mineralstoffen, Spurenelementen und Vitaminen führen kann. Diese Ernährungsform setzt eine umfassende Kenntnis im Bereich Ernährung und Nährstoffe voraus, v. a. bei Schwangeren, Kindern und alten Menschen.
